Can you keep the Original date of photo if you convert to new format?

Hello! Thank you for reading. Long story short, my wife has a billion pictures of our children that she's attempting to make memory book out of. She has been uploading them from her phone onto a gigantic folder on this laptop. Nearly all are JPEG, but unfortunately, about 50-60 were taken and saved as HEIC files, and completely out of order as far as timeline.

 

I am able to convert HEIC to JPEG, but then when transferred to the gigantic file, the create date is today's date, not when it was first taken.  Is there any way to maintain the original create date even though you converted it to a new format?
